Man’koucha, also known as Manakish, is a traditional Middle Eastern flatbread that is often enjoyed as a breakfast or snack food. Here’s how to make a basic Man’koucha, along with the required ingredients

Ingredients:
– 3 cups all-purpose flour
– 1 ½ teaspoons active dry yeast
– 1 teaspoon sugar
– 1 teaspoon salt
– 1 tablespoon olive oil
– 1 cup lukewarm water
– 2 tablespoons za’atar or a mixture of sesame seeds and thyme

Instructions:
1. In a large mixing bowl, combine the flour, yeast, sugar, salt, and olive oil.
2. Add the water and mix well until a smooth and sticky dough forms.
3. Turn the dough out onto a floured surface and knead for 5-10 minutes until the dough is smoother and more elastic.
4. Place the dough in a clean, oiled bowl and cover it with a damp towel. Let it rise for about an hour, or until it has doubled in size.
5. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

6. Divide the dough into 6-8 equal pieces and shape them into round disks.
7. Place the disks on the lined baking sheet and use your fingers to create small indentations on the surface of the dough.
8. Sprinkle the za’atar or sesame seed and thyme mixture on top of the dough disks.
9. Bake the Man’koucha in the preheated oven for 10-12 minutes, or until they are golden brown and crispy on the bottom.
10. Serve warm or at room temperature, accompanied by some fresh vegetables, olives, and labneh.
