Ingredients:
- 1 cup dried chickpeas
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1/2 cup fresh parsley leaves, chopped
- 1/2 cup fresh cilantro leaves, chopped
- 1 teaspoon salt
- 1 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon black pepper
Instructions:
- Soak the dried chickpeas in water overnight.
- Drain the chickpeas and pat dry with a paper towel.
- Add the chickpeas, onion, garlic, parsley, cilantro, salt, cumin, coriander, and black pepper to a food processor.
- Pulse the mixture until it is well-combined, but still slightly coarse.
- Transfer the mixture to a bowl, cover it with plastic wrap, and refrigerate for at least 1 hour.
- Heat a ½ inch of oil in a frying pan over medium-high heat.
- Scoop 1 tablespoon of the falafel mixture and use your hands to form it into a small ball.
- Flatten the ball slightly and fry the falafel in the hot oil until it is golden brown on all sides, which should take about 3-4 minutes.
- Remove the falafel from the oil with a slotted spoon and drain it on a paper towel-lined plate.
- Serve hot and enjoy!
