Ingredients:

  • 1 cup dried chickpeas
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1/2 cup fresh parsley leaves, chopped
  • 1/2 cup fresh cilantro leaves, chopped
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon black pepper

Instructions:

  1. Soak the dried chickpeas in water overnight.
  2. Drain the chickpeas and pat dry with a paper towel.
  3. Add the chickpeas, onion, garlic, parsley, cilantro, salt, cumin, coriander, and black pepper to a food processor.
  4. Pulse the mixture until it is well-combined, but still slightly coarse.
  5. Transfer the mixture to a bowl, cover it with plastic wrap, and refrigerate for at least 1 hour.
  6. Heat a ½ inch of oil in a frying pan over medium-high heat.
  7. Scoop 1 tablespoon of the falafel mixture and use your hands to form it into a small ball.
  8. Flatten the ball slightly and fry the falafel in the hot oil until it is golden brown on all sides, which should take about 3-4 minutes.
  9. Remove the falafel from the oil with a slotted spoon and drain it on a paper towel-lined plate.
  10. Serve hot and enjoy!
